Roast Chicken


1 (3 1/2 lb.) chicken
1/3 tsp. salt
1/4 tsp. pepper
1/2 tsp. cumin
1/4 tsp. turmeric
1 tbsp. oil


Discard excess fat from chicken.

Mix salt, pepper, cumin, turmeric and oil. Rub chicken over all with mixture.

Spoon stuffing into chicken.

Set in a roasting pan and roast at 400 degrees for about 1 1/4 hours, basting occasionally.

About as traditional as you can get! Don't change a thing -- bud DO skin the chicken to lower calories and fat/ Try some whole or large-cut carrots and quartered, large white onions baked in. [Like Baba used to do it!]
