Spinach-Artichoke Quiche 5507 views

In less than five minutes of prep time, you can make a crowd-pleasing crustless quiche.

Ingredients

2 4-ounce jars marinated artichoke hearts, drained
20 ounces frozen spinach, drained and squeezed dry
2 T olive oil
1/2 onion, diced
2 cloves garlic, minced
8 ounces cream cheese, softened
2 T butter, softened
1/2 c grated Parmesan cheese


Directions

Preheat oven to 350 degrees. Butter casserole dish. Spread a thin layer of artichoke hearts across the bottom. Set aside.

Sautee onion until translucent, add garlic and stir continually for one minute. Add spinach and sauté until wilted, approximately 4-5 minutes. Pour spinach mixture over artichoke bottoms.

In a large mixing bowl, cream together cream cheese, butter and Parmesan. Spread evenly over the top of the spinach.



Cover and bake for 30 minutes. Remove tin foil and bake for an additional 10 minutes, until browned.
