Here is another way to incorporate the classic Rosh Hashanah foods apples and honey into your main course.
2 3-pound chickens, cut into eighths
2 t cinnamon
1 t nutmeg
1/2 t pepper
1 package (10 ounces) of dried apples
2 golden delicious apples, finely chopped
1/2 c honey
1/4 c apple juice
1/4 c soy sauce
Preheat oven to 350 degrees. Place chicken pieces in baking pan and sprinkle with spices. Layer dry and fresh apples on top of chicken. Combine honey, apple juice and soy sauce and pour over chicken pieces. Bake for 1 ½ hours, uncovered.
How do you manage to keep the dried apples ,sitting on top of the chicken, from burning while the rest of the chicken cooks?
Mine started burning after 40 minutes.
Delicious and dead simple to make. Was in the oven about two hours.
