You can still enjoy a big pancake breakfast during Passover

Ingredients

1/2 cup matzo meal
3 eggs separated
1/2 cup of warm water
A pinch of salt
Butter/oil for frying


Directions

1.Mix matzo meal and salt in a bowl and mix with water.

2.Beat egg yolks until light yellow. Mix the egg yolks into the matzo meal, salt and water mixture.

3.Whisk egg whites in a separate bowl until soft peaks form. Carefully fold the egg whites into the matzo mixture. The mixture should be slightly lumpy, so do not over mix.

4.Heat skillet over medium to high heat. Melt 2 tablespoons of butter. Fry pancakes for 2-3 minutes on each side.

5.Serve with Kosher for Passover genuine maple syrup, sliced strawberries or fresh blueberries.

6.Serves 2-3.
