Nothing says Passover like Matzo Brei for breakfast (we call this Pesach French toast)

Ingredients

3 matzo crackers
3 eggs
Salt and pepper to taste
Vegetable oil or butter

Directions

1. Break matzo into small pieces and soak in hot water for one minute. Squeeze out the water thoroughly.

2. In another bowl, beat the eggs with salt and pepper. Mix in the matzo until fully soaked with egg.

3. Heat frying pan with a little oil or butter. Pour the matzo mixture into the pan. Cook for 4-5 minutes until golden brown. Flip and cook the other side.

4. Serves 2 hungry eaters.

Nutritional Info

Nothing says Passover like Matzo Brei for breakfast. In our family, we call this Pesach French toast, but really it's just scrambled egg mixed with matzo. Enjoy your matzo brei sweet by topping it with cinnamon sugar or jelly -- or make it savory by melting cheese on top. You can even add onions and garlic to your matzo mixture for an extra savory touch.
