2 potatoes peeled
1 small onion peeled
2 eggs
3 tbsp. milk
2 tbsp. melted butter
1/4 cup flour
1/2 tsp. salt
black pepper
butter, for frying
sour cream


Grate potatoes and onions into a medium-sized mixing bowl.

In another bowl add eggs, milk and melted butter and blend.

Then add flour, salt and pepper and process to mix.

Pour over potatoes and onions and stir to mix.

Drop by quarter cupfuls on a prepared griddle or skillet.

Spread to make a 4" pancake.

Cook until brown on both sides, turning.

Serve with sour cream.

the whole point of cooking latkes is to fry in oil to remember the jug of oil you cant fry in butter!

OK already, gotta have the oil. But you can SPRAY oil, olive prefered, on a griddle or baking sheet, preheat, then proceed as above, browning on one side, then turn once. About the sour cream -- why not use applesauce -- another traditional garnish -- and choose unsweetened? Lower calories, lower fat, and every bit as good.
