1 can chicken or vegetable broth
1/2 cup finely chopped onion
2 cups cubed squash (or yams, potatoes, or combination)
1 cup sour cream (regular or fat-free)
Salt and pepper
Directions
In large saucepan, bring broth to boil.
Add onions and squash. Simmer until tender.
Mash.
Add sour cream until smooth.
Add salt and pepper to taste
