If you're like the kids in the delightful children's Passover story A Carp in the Bathtub, then this fish-free gefilte fish recipe is perfect for you. Ingredients3 medium potatoes, peeled2 medium onions, finely chopped extra virgin olive oil for sautéing 1 large eggplant 2 cloves garlic, minced/crushed 2 T chopped fresh parsley Sea salt, freshly ground black pepper and paprika to taste Matzo meal as required |

DirectionsBoil or steam the potatoes until tender and set aside.Preheat oven to 425 degrees. Sauté onions until golden (to reduce fat content, use minimal oil, adding water as needed to prevent sticking.) Remove top and bottom of eggplant and slice in half lengthwise. Sprinkle with salt and olive oil and place flesh-side down on a greased baking sheet. Pierce the skin with the tines of fork a few times. Bake for 20-30 minutes or until skin starts to shrivel. Remove from oven and cool for 5 minutes. Turn the oven down to 350 degrees. Scoop out the flesh from the eggplants and set aside. In a separate bowl, mash the potatoes. Add cooked onion, eggplant flesh, garlic and parsley. Season to taste with sea salt, freshly ground black pepper and paprika. Add in enough matzah meal to bind the mixture into a firm consistency. With wet hands, shape mixture into medium-size patties. Place patties on an oiled baking sheet and sprinkle each one with a little oil. Bake for 30 minutes until golden brown. Serve either hot or cold, with horseradish. |
