A super easy, super cheesey recipe, this broccoli pie is also a big crowd pleaser


1 package puff pastry, defrosted
3 T olive oil
1 medium onion, diced
2 1/2 c diced broccoli (can substitute part for cauliflower)
2 c cottage cheese
2 c low-fat sour cream
1 c grated Colby or other mild cheese, divided
4 eggs
4 T flour
4 T breadcrumbs
salt and pepper to taste


Preheat oven to 350 degrees. Spray casserole dish with cooking spray and line with a thin layer of puff pastry. Pastry should spill over the sides of the dish by about one inch.

In a large pan, saute onion in oil until translucent. Add diced broccoli and continue cooking for no more than 5 minutes, until just tender. Set aside.

Combine remaining ingredients in large mixing bowl, except for 1/2 cup of mild cheese. Fold in broccoli mixture and pour into casserole dish. Pinch back pastry dough around the edges to form a crust. Top the pie with remaining shredded cheese.

Bake for 20-25 minutes, uncovered, until firm and set.
