2 c. flour
2 c. sugar
1 1/2 c. Wesson Oil
2 tsp. cinnamon
2 tsp. soda
2 tsp. salt
3 eggs
2 c. shredded carrots
1 c. coconut
1 c. chopped nuts
1 sm. can crushed pineapple (drained)
Icing
2 - 3 oz. pkgs. cream cheese (softened)
1 TBSP milk
2 tsp. vanilla
Dash salt
1 lb. box of conf. sugar
Directions
Blend all cake ingredients, pour into 9 X 12 pan
Bake for 1 hour at 375 degrees
