Nothing says dessert on Rosh Hashanah like an apple cake. This one blends the best of traditional Rosh Hashanah ingredients and adds a hint of cinnamon. Perfection! IngredientsApple filling:5-6 cups sliced, peeled apples 2 T fresh lemon juice 1/4 c honey 1 T ground cinnamon Cake: 2 c sugar 1 c vegetable oil 1 T vanilla extract 1/2 c fresh orange juice 4 eggs 3 c flour 1 T baking powder 1/2 t salt (optional) small pinch of nutmeg Topping: Cinnamon and sugar |

DirectionsPreheat oven to 350 degrees. Generously grease twelve-cup bundt pan.Toss apples with lemon juice, sugar, and cinnamon. In a separate bowl, whisk together honey, oil, vanilla, orange juice, and eggs in until smooth. Fold in the flour, baking powder, salt and nutmeg. Blend until smooth. Spoon 1/3 of the batter into the bundt pan, then cover with half the apple mixture. Repeat again until the batter and filling is completed. Sprinkle cinnamon and sugar on the top. Place the bundt pan on a baking sheet to catch any drips and bake for 60-70 minutes until golden brown. Let the cake rest for at least 20 minutes until you remove it. |
