Another traditional Rosh Hashanah food, leeks make an unexpected side dish when fried into these light, delicate patties. Ingredients4 c leeks, thinly sliced (white part only)1 T olive oil 3 cloves of garlic, crushed 1 T chopped parsley 3 eggs 1 T whole wheat flour salt and pepper to taste olive oil for frying pan |

DirectionsHeat a large frying pan and add the oil, garlic and leeks. Saute over high heat for 3 minutes. Cool in a bowl before adding remaining ingredients and mixing together.Heat nonstick frying pan and add more oil for frying. Drop 1/2 cup quantities of the leek mixture to the hot pan. Flatten each one slightly and fry until golden brown on both sides. Drain on paper towels and serve hot. |
