Another traditional Rosh Hashanah food, leeks make an unexpected side dish when fried into these light, delicate patties.


4 c leeks, thinly sliced (white part only)
1 T olive oil
3 cloves of garlic, crushed
1 T chopped parsley
3 eggs
1 T whole wheat flour
salt and pepper to taste
olive oil for frying pan


Heat a large frying pan and add the oil, garlic and leeks. Saute over high heat for 3 minutes. Cool in a bowl before adding remaining ingredients and mixing together.

Heat nonstick frying pan and add more oil for frying. Drop 1/2 cup quantities of the leek mixture to the hot pan. Flatten each one slightly and fry until golden brown on both sides. Drain on paper towels and serve hot.

Made these tonight and it made 8 or 9 patties. Good texture but pretty bland. With some extra salt and sour cream, they were nice. Next time, I'll add more salt, pepper, and some additional seasonings to the mix. Thanks for the recipe!
