This roasted salmon dish is the perfect starter for your Rosh Hashanah meal. Ingredients2 firm nectarines halved, pitted and diced1 chili pepper, seeded and minced 1 T fresh cilantro, minced 2 t fresh mint, minced 2 T fresh lemon juice 1 t sugar 4 6-oz. salmon fillets with skin salt and pepper to taste |

DirectionsPreheat oven to 350 degrees.Make salsa by combine first 6 ingredients, seasoning with salt and pepper to taste. Cover and chill. Place salmon skin side down on a baking sheet. Brush with olive oil or spray with a thing coating of PAM Spray. Bake fish until the center is opaque, about 25 minutes. Transfer to a serving plate, top with chilled salsa and serve.
