This delicious recipe features tangy cream and honey sauce

Ingredients

Ingredients
9 ounces trout, soaked in 1/2 cup milk
1 t honey
2 ounces butter
2 ounces whole almonds, skinned and finely chopped
salt and pepper
4 T fresh heavy cream
1 T lemon juice
4 ounces flour


Directions

Wash and pat fish dry, then soak in 1/2 cup of milk for 10 minutes. Toss in flour, seasoned in salt and pepper.

Melt half the amount of butter in a frying pan, and fry the fish for 5-7 minutes on each side.

Melt the rest of the butter in a sauce pan and add in chopped almonds. Saute until golden brown. Add in honey and lemon juice. Bring to a simmer and add the cream, keeping the temperature low enough that the cream does not curdle.

Pour over the fish and serve with lemon. Serves two.
