Mmmm, nothing says St. Patrick's Day like a hot steaming bowl of stew Ingredients2 lbs beef, cut into 1-inch cubes3 T vegetable oil 14 ounces canned beef broth 1 c water 2 T parsley, chopped 1 1/2 t salt 1/4 t white pepper 1 bay leaf 6 carrots, peeled and cut into thirds 6 medium onions, peeled and cut into thirds |

DirectionsIn a Dutch over, brown the beef in oil. Add beef broth, water, parsley, salt and bay leaf. Cover and simmer for one hour.Add onions and carrots and simmer for an additional 30 minutes, until the beef is tender. Serve with potatoes and peas.
