Nothing says Passover like Matzo Brei for breakfast (we call this Pesach French toast)

Ingredients

3 matzo crackers
3 eggs
Salt and pepper to taste
Vegetable oil or butter


Directions

1. Break matzo into small pieces and soak in hot water for one minute. Squeeze out the water thoroughly.

2. In another bowl, beat the eggs with salt and pepper. Mix in the matzo until fully soaked with egg.

3. Heat frying pan with a little oil or butter. Pour the matzo mixture into the pan. Cook for 4-5 minutes until golden brown. Flip and cook the other side.

4. Serves 2 hungry eaters.
