Spread on crackers, whole wheat pita or crudites, also makes great sandwich filling Ingredients4oz red or brown lentils1 cube vegetable stock, optional 1 medium carrot, peeled and grated 1 tsp dried thyme 1 medium onion, finely chopped 2 cloves garlic, minced 1 T Extra Virgin olive oil Juice from 1/2 lemon or lime Salt and black pepper to taste Parsley, for garnish |

Directions1. Pick through and wash lentils. Add them to a pan with 2 1/2 cups of water. Bring to a boil, then simmer for 10 minutes or until lentils begin to soften and break up. Brown lentils will take longer than red lentils.2. Once lentils begin to break up, add stock cube, carrot and thyme to the water. Continue cooking for 10 minutes, adding more water as needed, until lentils are mushy. 3. Meanwhile, saute onion and garlic in olive oil until golden. 4. When lentils have fully absorbed the water, pour into a glass mixing bowl and add onion mixture. Squeeze in lemon juice and season with salt and pepper. Using a hand immersion blender or potato masher, blend thoroughly. Pour into a serving dishes and garnish with parsley. Chill for at least one hour prior to serving.
