These bars are perfect for quick snacks or an after-dinner treat Ingredients1 c whole wheat flour1/2 t baking powder 1/2 c butter, at room temperature 1 c packed light brown sugar 1 lg. egg or equivalent amount of egg substitute 1 c. dried apricots, diced 3/4 c. pitted prunes, diced 1 c raisins 1/4 c finely chopped walnuts or almonds |

Directions1. Heat oven to 350 degrees.2. Lightly grease a 13 x 9-inch baking pan. Line with foil and then grease again. 3. Mix flour and baking powder. In a separate bowl, beat butter and sugar with electric mixer until fluffy. Beat in egg. Stir in flour mixture until blended. 4. Add in apricots, prunes, raisins and nuts. Mix thoroughly. 5. Spread mixture into prepared pan. Pat down until firm. 6. Bake for 25 minutes or until the top is lightly brown and edges begin to pull away from sides of pan. 7. Cool on rack and then cut into 24 bars. Store in airtight container for up to 2 weeks. Author CommentsThese bars are perfect for quick snacks or an after-dinner treat.
