These brownies are sinfully fudgey and 100% vegan -- making them the perfect dessert choice for anyone

Ingredients

8 oz. unsweetened baker's chocolate
1 1/2 c maple syrup
1 c sugar-free applesauce
1 1/2 c soy or rice milk
1 T vanilla
2 c firm tofu (from the refrigerator section, not the silken kind)
1 1/2 c whole wheat or spelt flour
1 t salt
2 1/2 c walnuts or pecans


Directions

1. Put applesauce, tofu, milk, maple syrup, and vanilla into blender. Blend until completely smooth.

2. Pour applesauce mixture in small sauce pan. Add chocolate and heat on low temperature, stirring frequently to keep the chocolate from scorching. Remove from heat.

3. Preheat oven to 375 degrees F.

4. Add flour and salt to applesauce mixture. Whisk until just mixed, stir in pecans.

5. Pour brownie batter into a greased 13x9 pan.

6. Bake for 35-40 minutes or until a toothpick comes out clean.
