haman hats cookies

Ingredients

1c. sugar
1/3 c. oil
1/3 c. shortening
3 eggs
1/2 c. OJ
4c. flour
3 tsp. baking powder
1 tsp. salt
1 egg beaten for glazing
prune preserves (or plum)

Directions

Pre-heat oven to 350. Cream sugar, oil and shortening. Add eggs and juice and mix well. Blend with dry ingredients and roll into a ball. Divide into 4 parts, refrigerate for 1 hour. Roll out each piece very thin, 1/8" on a floured board. Using the rim of a glass, cut the dough into circles. Place 1/2-1/3 tsp. of filling into the center of each circle. Fold edges over until you form a triangle keeping the jam exposed. Overlap corners when folding. Brush dough with beaten egg and place on greased cookie sheet 2" apart. Bake for 20 minutes. Yields 4 dozen.
