It wouldn't be Passover without the macaroons! This recipe calls for chocolate, which makes the 'roons all the more irresistible. Ingredients1/3 cup unsweetened cocoa powder1 cup granulated sugar 2 cups unsweetened grated coconut 3 egg whites 1 t vanilla |

DirectionsMix sugar and cocoa together until fully integrated. Set aside.Beat egg whites for 6 minutes or until still peaks form. Reduce beater speed to low and gradually add in sugar and cocoa mixture. Turn off beaters and fold in coconut and vanilla. Drop teaspoonfuls of batter teaspoonfuls onto a greased cookie sheet. Leave 1 inch between cookies. Bake at 325 for 15 minutes, or until crunchy but still soft inside. Immediately transfer to cooling racks. |
