Cilantro is the flavor booster in this delicious, healthy and colorful salad, which serves as the perfect complement to our Southwestern Turkey Burgers.

Ingredients

2 cans black beans, drained and rinsed
1 c frozen corn kernels
1 bunch scallions, finely chopped (whites only)
1 red bell pepper, finely chopped
1/2 c fresh cilantro, finely chopped
3 T Extra Virgin Olive Oil
3 T white wine vinegar
1 1/2 t cumin
1 1/2 t coriander
salt & pepper, to taste


Directions

Pour beans into a colander and top with frozen corn. Rinse under cool tap water and drain well. Pour beans and corn into large glass mixing bowl. Add chopped pepper, scallions and cilantro.

In a small glass bowl, whisk together olive oil, vinegar, spices, salt and pepper. Pour over the beans and chill until ready to serve.

When you chop the cilantro, make sure to include some of the stems – they’re the most flavorful part of the herb.
