Perfect for quick breakfast, an ideal midday pick-me-up or after-dinner snack

Ingredients

2 over-ripe bananas, mashed
3/4 c unbleached all-purpose flour
1/2 c whole wheat flour
1/2 cup organic sugar
1/2 t baking powder
2 T warm water and 1 1/2 t dry egg replacer or 1 egg, beaten
1/2 c fresh or frozen and thawed blueberries


Directions

1. Preheat oven to 350 degrees F. Spray muffin cups with vegetable spray or line with paper liners.

2. Combine bananas, white and whole wheat flour, sugar and baking powder. Mix with wooden spoon until smooth.

3. In a separate bowl, combine water and egg replacer. Add into banana mixture.

4. Fold blueberries into batter.

5. Spoon batter into muffin cups.

6. Bake for 20 to 25 minutes, or until just golden brown.
