Ingredients1 navel orange¼ cup balsamic vinegar ½ cup vegetable oil 2 teaspoons Dijon mustard ½ teaspoons salt ½ teaspoon freshly ground pepper 10 ounces smoked cod (or salmon), cut into small cubes (about 2 cups) 1 cucumber, peeled, seeded and diced (1-1/2 cups) ½ cup coarsely chopped fresh parsley leaves 6 cups mixed spring lettuce |

DirectionsGrate the dark outer orange zest from the orange into a small bowl. Add the vinegar, oil, mustard, salt and pepper and whisk together.Cut the remaining rind from the orange, cut the orange into sections and discard the membrane. In a medium bowl, toss together the orange sections, cod, cucumber, parsley and half the dressing. Cover and chill the salad until ready to serve.
