Ingredients1 pound wide noodles (kosher for Passover)1/2 lb. salted butter 2 cups whole milk 1 1/2 cups sugar 2 tsp vanilla 4 well-beaten eggs 1 (20 ounce) can crushed pineapple, not drained Ground cinnamon, to taste |

DirectionsPreheat oven to 350 degreesBring to boil a large pot of salted water and parboil noodles until semisoft, about 10 mins. Drain noodles and return then to the pot and add butter. When butter has melted, add remaining ingredients, including a sprinkle of cinnamon to taste. Mix well. Pour into a large buttered dish (preferably glass, which makes it easier to see if sides of pudding are nicely browned). Sprinkle top with cinnamon. Bake uncovered about 1 hour, or until top is lightly browned and crispy. Let cool about an hour, cut into 16 squares. Author Commentssource: newsday |
